Frico, is a Friulan appetizer (or main course) , a sort of omelette with cheese originating in the montains of Carnia. It is a dish basically made of potatoes and melted Montasio cheese, sliced and arranged in layers (cheese, potatoes, cheese) into a pan covered with a lid and let it melt; frico is turned over on both sides until it has a nice golden exterior.The basic frico recipe can be enriched with bacon, onions and eggs.

1 medium onion
Montasio cheese(aged 3 months) 400g
bacon 150g
4 small potatoes (about 150 g)
ground pepper to taste

How to make it:
Put the bacon and onion in a pan to brown, thinly sliced. Peel the potatoes, cut into slices and add to the pan with the other ingredients, along with pepper, salt and a ladle of hot water. Cover with a lid and cook over medium heat for 30 minutes. Now add the sliced cheese, and mix everything. Then put the mixture in a pan and brown the frico well on both sides, until it forms a beautiful golden crust. Put the frico on a serving platter, cut into four slices and serve immediately.
